Northern regions in China produce wheat from which noodles are made. The main staple in Southern China is rice. Even noodles are made from grinding rice. Rice noodles are called fun or spelt as fan.
On a recent trip to the Pearl River Delta of China, I took these pictures showing how to make fun.
Speaking of Italian pasta, Martin Yan once made the remark that, since Marco Polo only visited the northern part of China, Italian pasta are basically wheat noodles. Therefore, the Italians have no fun!
